Baked Brie with Mango Chutney for National Cheese Lover’s Day

National Cheese Lover’s Day??? Woo hoo, sign me up! I guess this will be one of my naughty food moments. 🙂 I better make a nice green salad for dinner. Anyhoo, I have been making baked Brie for years and years as a quick and easy appetizer, or as an hors d’oeuvres for a party. It looks pretty, and is a crowd pleaser. It has just a touch of mango chutney to complement the creamy mellow Brie with some sweetness and spice, and the flakey buttery puff pastry is just the perfect medium to present it in. You could also add some chopped walnuts or pecans in with the chutney for crunch. I like to use an excess piece of puff pastry and a cookie cutter to cut out a shape and add it to the top for fun. Enjoy!

Ingredients

1 sheet of puff pastry
1 8oz wheel of Brie cheese
4 tablespoons mango chutney
1 egg, beaten

Instructions

  1. Preheat oven to 350.
  2. Thaw puff pastry according to package directions.
  3. Roll out puff pastry sheet between two pieces of wax paper.
  4. Place puff pastry sheet on greased or non stick cookie sheet.
  5. Place one tablespoon of chutney in the center of the puff pastry sheet, and gently spread into a circle about the size of the Brie.
  6. Carefully cut Brie in half.
  7. Place one half of the Brie cut side up in the center of the puff pastry sheet, on top of the chutney.
  8. Spoon and spread 2 tablespoons of chutney on top of the Brie. Cover with second half of the Brie, cut side down. (Basically making a sandwich with the Brie)
  9. Spoon remaining tablespoon on top of Brie.
  10. Bring the edges of the puff pastry sheet up and over the Brie, and pinch the seams.
  11. Turn Brie over, seam side down.
  12. Brush egg gently all over puff pastry.
  13. Place in oven, and bake for 25 to 30 minutes – Puff pastry will be a beautiful golden brown.
  14. Remove from oven and let cool for five minutes. Serve warm with crackers, or crusty bread.
