Meatless Monday – Thai Slaw

Here is a great slaw for BBQ’s, picnics, or lunch at your desk. πŸ™‚ Super easy to put together, and the exotic peanutty dressing is to die for. Enjoy!

Ingredients
For the dressing:
1⁄4 cup mild tasting oil
1 tablespoon Sesame oil
2 tablespoons rice wine vinegar
2 tablespoons honey
1⁄2 teaspoon fresh ginger, finely grated with microplane
1 clove garlic, finely minced or use a garlic press
2 tablespoons fresh lime juice
2 tablespoons soy sauce
2 tablespoons creamy peanut butter
salt and black pepper to taste
For the slaw:
1 8oz package shredded purple cabbage
1⁄2 heaped cup grated carrot (the one you buy prepackaged works great)
1⁄2 cup yellow pepper finely chopped
1⁄2 cup edamame (shelled) and roughly chopped
1⁄4 cup cilantro, finely chopped
1 tablespoon green onion, finely chopped
1⁄4 cup roasted and salted peanuts, roughly chopped

Instructions
For the dressing:

1. Place all ingredients in a mason jar fitted with a lid, shake until well combined.
For the slaw:
1. Toss all ingredients together to combine
2. Add desired amount of dressing to slaw, toss to combine.
3. Garnish with extra chopped peanuts if desired.
7. Serve and enjoy!
