Meatless Monday – Green Peppers and Baby Potatoes with Indian Spices

Green pepper is definitely not one my favorite vegetables, they can be bitter and pungent – overbearing in dishes, but somehow this is one of my favorite vegetable recipes. The spices as well as the cooking process seems to mellow the bitterness of the peppers, leaving nothing but a hearty dish diverse in flavor. It’s ready in about an hour, and is easy to prepare. Enjoy!

Ingredients

1⁄2 teaspoon Garam Masala
1 teaspoon coriander powder
1⁄2 teaspoon cumin powder
Dash of Cayenne pepper, or Kashmiri Mirch
1⁄4 teaspoon turmeric
4 tablespoons water – divided
3 tablespoons oil of choice
1⁄2 teaspoon cumin seeds
1⁄2 teaspoon mustard seeds
6 to 8 curry leaves
1 cup onions, finely chopped 8 Dutch yellow baby potatoes – roughly 2 cups quartered
2 Green Bell Peppers, chopped into bite size pieces
1⁄2 teaspoon fresh ginger grated with a microplane
2 cloves garlic, finely chopped or pushed through a garlic press

Instructions

  1. Place Garam Masala, coriander powder, cumin powder, cayenne pepper, and turmeric into to a small bowl.
  2. Add 2 tablespoons of water and stir to make a paste, set aside.
  3. Heat oil over medium heat in large skillet
  4. Add cumin and mustard seeds.
  5. When mustard seeds start to pop add curry leaves.
  6. Add onions, stir.
  7. Saute until onions are translucent (about 7 minutes), stirring frequently, and then reduce heat to low.
  8. Add potatoes, stir and cover.
  9. Cook for 15 minutes, stirring occasionally.
  10. Add masala paste, stir.
  11. Add additional 2 tablespoons of water to the bowl masala paste was in and then add water to potato mixture.
  12. Cook covered for 7 minutes, and then add green pepper, garlic, and ginger, stir.
  13. Cover and cook until peppers are soft and potatoes are tender, roughly 7 to 10 minutes.
  14. Serve and enjoy!
