Haroset (nuts in date syrup)

I adore sweet, syrupy, nutty/crunchy Haroset. Not just for Passover, it’s fantastic served up in a lettuce wrap, poured over cream cheese and served with crackers, smeared over toast, drizzled over bananas, yogurt, ice cream, waffles or pancakes – or simply relished on it’s own. There are many different recipes for Haroset, this is one my mother-in-law shared with me. Enjoy!

Ingredients
1 cup boiling water 1 1⁄2 cups date syrup
1 cup unsalted roasted peanuts, roughly chopped
1 cup raw unsalted walnuts, roughly chopped

Instructions
1. Bring water to a boil.
2. Place date syrup in a large bowl.
3. Pour boiling water over syrup and stir until combined.
4. Add nuts and carefully stir until nuts are well coated with the syrup.
5. Serve immediately, or store in refrigerator. Enjoy!
