Meatless Monday – Egg Salad with a Twist
Leftover boiled eggs? No problem! How about egg salad with a twist? This egg salad gets it’s rich sweet flavor from the sauteed onion, and the green onion adds some freshness and texture. Serve with toast, crackers, matzah, or over salad greens – it’s all good! Enjoy!
Ingredients
3 jumbo eggs, boiled and shells removed
1 tablespoon oil of choice (roughly, you could use less)
1⁄4 cup onion, finely chopped
1 tablespoon green onion, finely chopped
2 to 3 tablespoons mayonnaise – depending on desired creaminess
1 squirt of yellow mustard
Salt and black pepper to taste
Instructions
1. In a small skillet over medium heat, add oil.
2. Add onions and stir.
3. Cook onions stirring frequently until translucent and a bit golden.
4. Remove from heat and set aside to cool.
5. In a bowl mash eggs with a fork.
6. Add cooled onions to eggs.
7. Add green onion, mayonnaise, mustard, salt and pepper.
8. Stir to combine.
9. Serve with toast, crackers, or over greens.
10. Enjoy!
