Meatless Monday – Indian Inspired Latkes

Aloo tikki (Aloo means potato and tikki means a small cutlet/patty) is an Indian appetizer that I just adore. They were my inspiration here to change up the traditional latke. Crisp on the outside and soft on the inside with just a hint of exotic spices mixed in. If you want to turn up the heat, add chopped green chilies to them. Enjoy!

Ingredients
2 cups boiled potatoes, grated
2 cups potatoes, grated and well drained
1 cup onion, grated
1⁄2 cup cilantro, chopped
1⁄2 cup matzo meal
21⁄2 teaspoons Garam Masala
1⁄4 teaspoon Cumin powder
Dash of Cayenne pepper
11⁄2 teaspoons Himalayan Pink salt (or salt to taste)
2 large eggs
Oil for frying

Sour Cream topping:
1⁄2 cup plain yogurt
1⁄2 cup sour cream
1⁄2 teaspoon Himalayan Pink salt (or to taste)
1⁄8 teaspoon Cumin powder
1⁄4 teaspoon Garam Masala
Dash Cayenne pepper
1⁄3 cup chopped cilantro

Instructions
1. Boil 2 cups of potatoes, set aside.
2. When cool enough to handle grate into large bowl.
3. Grate 2 cups of raw potatoes (skin removed). Drain excess water thoroughly using a towel, or squeezing by hand through a colander.
4. Add raw potatoes to grated boiled potatoes.
5. Add onions, cilantro, matzo meal, Garam Masala, Cumin, Cayenne Pepper and salt to potatoes.
6. Beat eggs in small bowl, and add to potato mixture.
7. Mix by hand until well combined.
8. Form potato mixture into 3 inch (roughly) patties.
9. Heat oil in large skillet.
10. Working in batches (don’t crowd the skillet), fry latkes for roughly 4 minutes per side until golden brown.
11. Place on plate covered in paper towels to absorb excess oil.
12. Continue frying in batches until latkes are done. Makes approximately twelve latkes.
13. Serve immediately with sour cream topping.

Sour Cream topping:
1. Combine yogurt, sour cream, salt, Cumin powder, Garam Masala, Cayenne, and cilantro in a small bowl. Serve with latkes.
